After peeling and cutting carrots. Boil them in water for about 6 minutes until they are soft but not mushy.
While carrots are cooking make the marinade. In a bowl add next 10 ingredients to a glass container with a tight seal.
When hot dog, I mean carrots are finished cooking. Run them under some cool water to stop the cooking process. Add them to the marinade and seal tightly.
Marinate carrots for at least 24 hours. This allows all the flavors to infuse and give you that hot dog taste. When you think about it, give them a good shake in the container.
After 24 hours, heat a medium skillet over medium heat. Add the olive oil and about 1/4 cup of the marinade. Cook carrots for about 8 minutes until browned.
Serve in a heated bun with cabbage on the bottom, carrot dog and then onions and yellow mustard.
You can use any topping you like for this hot dog. If you like vegan chili make a chili dog! How about relish and sauerkraut! Vegan cheese and stone ground mustard. You pick! YUM!
