This is the perfect summertime cookie. Great for the waistline and no heating up the kitchen with the oven. Full of good for you foods. In fact, it might be better for you if you ate this dessert rather than skipped it!
Heat small skillet, add coconut and toast slightly. Careful not burn it.
In a double boiler melt chocolate chips. OPTIONAL: Add a little coconut oil to this slightly.
Add rest of ingredients to melted chocolate including coconut. Combine very well with wooden spoon.
Line baking sheet with parchment (make sure the baking sheet will fit into your refrigerator). With a cookie scoop or two spoons form balls. Refrigerate until completely chilled.
Store in refrigerator in a closed container until ready to serve.
