What if there was a dessert that I told you it would be better for your health to eat that it would be to skip it?  What if I added the word chocolate and cookie to the description!  Would it blow it for you if I told you it was NO BAKE, Vegan and Gluten Free?  It shouldn’t!  In a word this recipe is decadent! Chewy chocolate goodness that will help make your body inhospitable to cancer.  These No Bake Chocolate Cookies do not disappoint!  Here are all the reasons YOU SHOULD EAT THEM! 

Coconut – Fiber, Healthy Fats and Iron

No Dairy Dark Chocolate – Thriving Antioxidants 

Dates – Healthy Source of Sweet Taste with FIBER

Pecans or Walnuts – Plant Based Omega 3, fiber and lots of minerals and vitamins

Ground Flax Seed – Plant Based Omega 3, Fiber and Plant Estrogens called Lignans

Vegan No Bake Chocolate Chip Cookie

This is the perfect summertime cookie.  Great for the waistline and no heating up the kitchen with the oven.  Full of good for you foods.  In fact, it might be better for you if you ate this dessert rather than skipped it!

Servings: 12 cookies
Ingredients
  • 1/2 cup coconut flakes
  • 2 cups vegan chocolate chips Enjoy Life Foods are great
  • 1/2 cup pitted finely chopped dates
  • 1/4 cup finely chopped pecans or walnuts
  • 3 tbs fresh ground flax seeds or chia seeds
  • 1/4 cup nut butter, almond or cashew
  • 2 tbs maple syrup or coconut syrup
  • 1 tsp vanilla extract
  • 1/8 tsp ground cinnamon
Instructions
  1. Heat small skillet, add coconut and toast slightly.  Careful not burn it. 

  2. In a double boiler melt chocolate chips. OPTIONAL: Add a little coconut oil to this slightly. 

  3. Add rest of ingredients to melted chocolate including coconut. Combine very well with wooden spoon.

  4. Line baking sheet with parchment (make sure the baking sheet will fit into your refrigerator). With a cookie scoop or two spoons form balls.  Refrigerate until completely chilled.  

  5. Store in refrigerator in a closed container until ready to serve.
