Cool Cucumber Salad

Get ready to get addicted to this salad this summer! This is one of my favorite go-to dishes for a light lunch or a side dish at a picnic or barbecue! It's such a simple dish, you will wonder how it can be so delicious with so few ingredients and such quick assembly time! I'll go ahead and say you're welcome now!

Ingredients

  • 2 organic cucumbers, sliced
  • pinch sea salt
  • 2 cups plain nut yogurt, I like cashew
  • 1 tbs fresh dill
  • 1 garlic clove, minced
  • 1 tbs white wine vinegar or apple cider vinegar

Instructions

  1. Sprinkle sliced cucumbers with salt.  

  2. Combine yogurt, dill, garlic, and vinegar in a bowl. 

  3. Fold in cucumbers into the yogurt mixture.

  4. Refrigerate for at least 2 hours before serving. Season with salt and pepper.  Can garnish with extra dill. Serve chilled.
