Snack Tots
Real food snacks that think they are tater tots but they are cauliflower! YAY!

Coconut Oil Cooking Spray

cups
riced and roasted cheddar
yellow cauliflower, traditional white is acceptable

cup
shredded raw cheddar cheese or Vegan Cheese

1
pasture raised egg
-
¼
cup
almond flour
-
4
tbs
arrowroot starch
-
½
tsp
dry mustard
-
salt and pepper

Preheat oven to 400°F. Spray the mini muffin tin with coconut oil.

Combine all the ingredients in a bowl and mix well with a whisk or a fork.

Using a spoon scoop out even amounts into muffin tin and press firmly into each cup.

Bake for 15 – 20 minutes until golden brown.

Cool slightly and remove the snack tots out of tin, serve with catsup or red pepper hummus or homemade ranch dip!
