What the What Bars

Chocolate and peanut butter never had it so good!  Brain food is what these bars should be called.  With a healthy walnut nougat center and dark chocolate tops and bottoms, they feel indulgent! They are raw vegan food so enjoy!

Ingredients

Chocolate Top and Bottom Layer

  • 9 oz dark cacao chocolate, dairy free
  • 1 tbs coconut oil

Walnut Nougat Layer

  • 1 cup raw walnuts
  • 1/8 cup dried coconut flakes
  • 2 tbs coconut oil
  • 7 pitted dates
  • 1 tsp vanilla extract

Peanut Butter Layer

  • 1/2 cup organic sugar free peanut butter
  • 1 tbsp maple syrup

Instructions

  1. Line 9" x 9" pan with parchment paper.  Cutting 2 pieces and laying them opposite of one another in a cross pattern will make your work easier.  

Chocolate Top and Bottom Layer

  1. In a double broiler melt chocolate and coconut oil together.  Careful not to over heat.  

  2. Evenly spread half of the chocolate in the parchment lined pan.  Set aside.

Walnut Nougat Layer

  1. In a blender add all nougat layer ingredients.  Pulse until blended well but NOT smooth.  Should be sticky and thick.  

  2. Spread nougat layer evenly over chocolate in the pan.  Carefully and slowly press flat with a wooden spoon or slightly wet fingers. 

Peanut Butter Layer

  1. In a bowl whisk together peanut butter and maple syrup.  

  2. Spread peanut butter evenly over nougat.  Go slow and work from the center outward.  I use my fingers for this work.  

  3. Top with remaining chocolate in a nice smooth top layer.  

  4. Garnish with chia, coconut, or nuts.  

  5. Place pan in the freezer for at least an hour.  Remove the whole bar from parchment and pan and cut into small squares.  

  6. Store all leftovers in the freezer or refrigerator.
