Vegan Eggnog does exist and guess what…it is delicious! Enjoy this holiday treat with no added sugar, completely vegan, raw and you know if it’s from me it’s gotta be easy. It can be challenging to find replacements for your non-vegan favorites. This recipe is no compromise on taste or looks! It is beautiful in the glass and the taste is so amazing. So enjoy this tasty little treat at will! Today in my daily Periscope broadcast we named it JustNog! I think it would be amazing to replace your coconut or nut milk for a week with this tasty treat! Vegan Eggnog – JustNog
1 cup pecans, soaked in 1 cup of water for 4+ hours
1 cup dates, pitted and soaked in 1 cup of water for 4+ hours
2 cups water
1 tsp cinnamon
1 tsp nutmeg
2-4 dashes of cardamom
2 tsp vanilla extract
1/2 cup coconut milk
Add all ingredients to blender except coconut milk. Blend until smooth. Add coconut milk until desired color and consistency. You can use hot water if you want it warm. You can chill it if you like it cool. To thin add more coconut milk. To thicken, add more dates and pecans. Play around with spices you like!
This recipe is so easy to customize to make it your own. I have made many versions of it. Yes, you can add the alcohol of choice. Just do that in moderation and be sure to label the adult version from the youngsters version!
