No Bake Nut Butter CandyNut Butter Candy

This is such a fun “no bake” candy to make for a special occasion!  It really only takes one to tickle your taste buds and fill your tummy!  This recipe will make about 12 pieces of candy. They are full of good for your body stuff, BUT they are not guilt free and should be shared or frozen in batches to prevent overeating!  I was just really typing that as a reminder to myself.  😉

I used organic peanut butter for my recipe.  You can use any nut butters to make these.  They should be smooth.  If you want your nut butter a little more creamy put in blender or food processor with 1 teaspoon of coconut oil and blend.  You can do that with a hand/stand mixer also.

“No Bake” Nut Butter CandyNo Bake Nut Butter Candy

1/2 cup organic peanut butter
1/4 cup chopped dates
1/4 cup chopped pecans
1/4 cup dark baking chocolate
1/4 cup raw honey (you can use any gooey sweetener of your choice, measurements should not change)
1 tbsp of arrowroot starch
1/8 tsp ground cardamom (cinnamon or ginger could be substituted)
1/4 cup fine coconut flakes

Line small baking sheet with wax paper. Place all ingredients except coconut in a mixing bowl.  Stir until mixed well. Pour coconut flakes onto a small plate. Wet hands lightly to prevent sticking.  Roll into 12 balls.  One at a time roll just tops of the candy into the coconut flakes. Place on cookie sheet.  Refrigerate for 20-30 mins before serving.  If you freeze them make sure to let them thaw before serving.
