Gluten Free Mini Apple Pie

It is hard to imagine a summer holiday without apple pie!  So, let’s NOT!  Let’s imagine a summer holiday with this low sugar gluten free mini apple pie recipe!  Now that is a reason to celebrate.  This recipe is a modification of traditional apple pies.  You might be wondering why I choose to make them in the MINI form.  That is because it is a great way to auto portion control and they are so stinking’ cute!  

A Word About Organic Apples

You might think because when you make apple pie you peel the apples so no need to buy organic. My general rule for eating organics is “If you eat the peel, it’s no deal!” However apples have very thin skin and are a crop that is highly sprayed with pesticides.  On a scale from 1-10, 1 being super clean and 10 being super toxic, I would put traditional non-organic apples as a 9 even if you are going to peel them.  I love this mainstream article on Forbes.com “Five Reasons to Eat Organic Apples: Pesticides, Healthy Communities, and You” .

Mini Gluten Free Apple Pie Recipe

Crust:
Bobs Red Mill Pie Crust (Gluten and Dairy Free Version- follow instructions on package for shortening)
1 1/2 Cups of Coconut Flower for Rolling Crust

Filling: 
4-6 Organic Green Granny Smith Apples
2 Hard Sweet Organic Apples (I used Fuji)
4 TBSP of Organic Maple Syrup
1 TBSP of citrus liquid
1/4 TSP of Real Salt
1/4 TSP of Grated Nutmeg
1/2 TSP of Cinnamon

Follow instructions on Bobs Red Mill Pie Crust for shortening, I used butter.  Roll out pie crust using coconut flour.  Keep refrigerated as you work to keep butter from melting.  In a large bowl core and peel all apples.  Add citrus juice to apples and mix gently, this will keep them from turning brown while you are preparing them to bake. Pour apples in a large pot add maple syrup, salt, nutmeg, and cinnamon.  Heat mixture on low for 3-4 minutes until juices start to form.  Remove from heat and set aside.  Prepare muffin tin with paper cups. On a clean flat surface spread 1/2 coconut flour.   Roll the dough flat and thin and lightly dust with coconut flower as you go to prevent sticking.  Use flattened paper cup as a stencil and cut out a circle.  Fill will apples and cut a top to fit.  Bake on center rack for 20 minutes at 425 and then lower heat to 375 and cook for 30 minutes.   Allow to cool and serve.
