Fig and Cheese Stuffed Bison Burgers

Regular readers and followers of Go2Kitchens know that I don’t eat a lot of meat, but there’s just something about grilling up a burger in the backyard in the summer, right? Your burgers can even be vegan or vegetarian, like my black bean burger I made on Lunch With Leslie last week, but today I’m using one of my favorite animal proteins, Bison to make Fig and Cheese Stuffed Bison Burgers. Bison meat has a richer, meatier taste than beef and it’s also lower in saturated fat, giving you a healthier option. Another plus for eating bison is you are more likely to find it grassfed than beef.  Since bison isn’t as popular as beef right now, typically the animals are allowed to roam free instead of being raised in feedlots.  If you can’t find any Bison in your area you could also use a ground beef, chicken, turkey, or lamb.

There’s no way I’m offering you a regular, plain jane burger either! I’m always thinking of ideas and ways to jazz up my food, and today’s recipe is no exception. These burgers have an added surprise of being stuffed with tangy gorgonzola cheese and sweet figs! I always get my figs from Valley Fig because I know they are going to be top quality, taste the best, and are going to provide my body with fiber, potassium, calcium, and iron. Figs for the win! Figs also provide fiber for our bodies, which is what we need to keep things moving (if you know what I mean lol), keep us feeling fuller longer, and helps reduce the risk of cardiovascular disease.  All that in a delicious, sweet fig that I love eating anyway? Burger Grilling Tip…

Some grilling tips for you before we get started; you want to make sure your burgers are room temperature when you place them on the grill and preheat the grill up to a medium heat, we want to cook these burgers slow and not rush them with a high heat. Secondly, once you get your burgers on the grill, don’t touch them! People sometimes tend to want to get flip happy or press the burgers down a lot while they cook, just let them do their thing! I like to watch my burgers and see that they are cooking from the bottom up before I flip them. Ok, let’s start making these burgers so you can eat them sooner!

Fig and Cheese Stuffed Bison Burgers

This recipe is for four burgers but you can definitely half it if you want to make only two, but you won't once you taste them. This is the PERFECT burger for a summer bbq, family reunion, backyard birthday, or just a friday night! Ingredients
  • 1 lb bison
  • 4 tbsp gargonzola cheese
  • 1 cup figs sliced
  • 2 cloves garlic minced
  • 1 tsp cayenne pepper
  • 1 tsp black pepper
  • 1 tsp sea salt
Instructions
  1. Preheat grill on medium heat.

  2. Add garlic, cayenne, pepper, and salt to bison meat and mix well with your hands, divide into four patties. 

  3. Take 1/4 of the meat off each patty to use as a top, then take the rest of the meat and form into patties with a "well" in the middle that you are going to fill with the rest of the ingredients.

  4. Place 1 tbsp of cheese and a 1/4 of the figs into the "well" and top with the extra meat then press together to seal. Repeat with each patty.

  5. Once the burgers are filled and topped, place them on the grill and flip once.
