The Egg-ceptional Super Food

Did you know that an egg contains every single nutrient (most in micro amounts) that the human body needs to function?  Of course when fertilized it does produce life, a chicken life, so you have to imagine that it is full of life giving nutrients.  An egg is loaded with B12, B2, Vitamin A, B5, Omega 3 fatty acids and Selenium.  You get about 6 grams of protein, 5 grams of fat and 212 mg of cholesterol in an egg.  Whoa…you might be thinking, 212 mg of cholesterol, isn’t that a lot?  Yep, that’s right.  Did you know that every cell in your body has cholesterol in it?  In fact your liver produces it every single day if you are not getting enough in your diet.  So you need cholesterol to survive.  Getting it from food sources, the way the body likes, prevents it from getting out of balance and therefore having “high” or out of balance cholesterol. Now that is a very laymens way of explaining it, but it is essentially what happens.  So the egg is a great way to get cholesterol naturally along with other essential nutrients.  There are many studies by big name sources that state there is no correlation between eating eggs and heart disease.  So eat your eggs, they really are the perfect food!

Turkey and Veggie Frittata

2 Cups Sautéed Fresh Spinach
1 tsp Coconut Oil
6 Pasture Fresh Eggs (can substitute with any fresh egg) 1⁄4 Cup Water
1⁄4 lbs of Cooked Ground Turkey
1⁄2 Cup of Fresh Pico de Gallo (can use fresh salsa)
1⁄4 Cup of Feta or Goat Cheese, Crumbled
Salt and Pepper to Taste

Preheat oven to 350.

Coat pie plate bottom and sides lightly with coconut oil. Evenly distribute sautéed spinach in bottom of pie plate. Add turkey, Pico de Gallo, and Feta in even layers to pie pan. In a bowl whisk 6 eggs and water together, slowly pour into the pie plate with rest of ingredients.

Bake 30 minutes until firm.
