Coconut Candy Bars Recipe (Mounds Redo)

THESE ARE TREAT AND NOT A HEALTHY ANTICANCER FOOD I CAN EAT EVERY DAY!  

Now we have that out of the way.  This recipe is going up the weekend before Valentine’s Day 2017.  I wanted to give you a “HEALTHIER” real food candy alternative to the junky chocolate that you get in the overprices red heart boxes!  So on those very special occasions you can have a fun, healthier and yummy alternative.

Coconut Candy Bars Recipe (Mounds Redo)

Candy Insides

2 cups finely shredded unsweetened dried coconut

2 tsp vanilla extract

4 tbs honey or maple syrup

4 tbs coconut cream fat

6 tbs coconut butter, melted

Chocolate Coating

2 tbs coconut oil, melted

8 oz dark cocoa chocolate chips

pinch of salt

Candy Insides – mix all ingredients in a bowl until well combine. Line square baking dish with parchment paper. Spoon mixture into the pan and spread evenly. Place in freezer until firm enough to cut. Cut into small rectangular bars. Place on parchment line baking sheet and place back into the freezer until ready to coat with chocolate.

Chocolate Coating – place all ingredients in a bowl and mix well.

Slowly dip each frozen bar in the coating and place back on the tray. Complete all bars and move back to the freezer. Dip a second time for thicker coating.

Store in freezer or refrigerator for up to one month.

Option: press one whole almond into the top of each bar before freezing.

Makes 10 small bars
