Avocado Stuffed Meatball 

I am mostly a plant based eater so when I eat any kind of meat I am looking for something with some serious flavor and yumminess.  I ran across this recipe for avocado stuffed meatball from Dr. Josh Axe’s book “Eat Dirt” (read my interview here with Dr. Axe).  Although I make it a habit to have my own recipes here at the go2kitchens website…I could not resist posting this for you!  I dream about these little balls of yumminess!  You can never miss when you have some creamy warm avocado hiding inside a meatball.  Bonus is that they are really easy to make and your family is going to love them! 

A word about grass fed beef…

You always want to eat a healthy animal. For cows to be as healthy as possible they should be grass fed. Which simply means that they are allowed to feed and forage naturally in a pasture. When they are grain fed in a feedlot they are fattened artificially so they can be slaughtered quickly. A grass fed cow is allowed to fatten naturally and at a normal rate. They are much happier healthier cows which will produce the happiest and healthiest beef for you!

Avocado Stuffed Meatballs

coconut oil 

1 pound ground grass-fed beef

1 pasture raised egg

3 tbsp chopped fresh parsley 

4 cloves of garlic

1 tbsp dijon mustard

1 tsp sea salt

1 tsp black pepper

1/2 avocado, cut in to small dice

Preheat oven to 400 degrees.  Lightly grease sheet pan with coconut oil. In a large bowl combine all remaining ingredients except avocado.  Mix well and using slightly wet hands make 8-12 meatballs. To stuff meatballs, make a hole in the center of the meatball and insert 1 avocado piece. Close up hole making sure that the avocado piece is fully surrounded by meat. Place meatball on prepared sheet pan and bake until cooked through, about 12 minutes.  

Serves 4 (with 2 meatballs each)
