Soak figs in warm water for at least 15 minutes before preparation to soften and hydrate them.
Drain figs and place in food processor, pulsing a few times until roughly mixed.
Rinse and drain chickpeas and add to the food processor and continue pulsing until mixed. Scrape down the sides of the food processor bowl with a spatula for even mixing.
Add blueberries. Only use frozen if they are thawed completely and dry. Pulse again until incorporated together.
Add juice of 1/2 a lemon, vanilla extract, and salt.
Run food processor on low while adding almond milk, one tablespoon at a time, until you reach your desired consistency and a smooth texture.
Pour in a bowl and let chill in the refrigerator until you are ready to serve. Use sliced apples and strawberries for dipping.
Add vanilla and add moisture into the mixture at this point by adding 1 tbsp of almond milk at a time until you reach a cookie dough consistency.
Add cocoa powder and add more almond milk until you reach a smooth texture. Be sure to scrape down the sides of the food processor bowl as you go.
Once fully blended, pour into a bowl and top with chocolate chips then chill in the refrigerator until ready to serve.
Serve with sliced apples and strawberries.
