Healthy Loaded Nachos

You don't have to give up your favorite snacks and treats just because you are adopting a healthier lifestyle. If you make a few changes to the recipes, you can still occasionally enjoy some foods that are typically thought of as "junk food". Like these nachos. They are so delicious and I tweaked them to be a healthier version of the junk food nachos you've eaten in the past. I'll go ahead and say you're welcome now. Enjoy!

Ingredients

  • 1 bag grain free chips
  • 1/2 head cauliflower chopped
  • 1/2 lemon
  • 1 tbsp olive oil
  • 1/2 tsp cumin
  • 1 tsp chili powder
  • 1/4 tsp cayanne pepper
  • 1/2 tsp garlic salt
  • 1 can organic black beans rinsed
  • 1/4 red bell pepper chopped
  • 1/2 jalapeno pepper finely minced
  • 1/4 cup black olives chopped
  • 1/2 cup grated raw jack cheese divided into two
  • 1/4 cup tomatoes chopped
  • 1/4 cup spinach cut into ribbons
  • 1/4 cup organic sour cream

Instructions

  1. Place cauliflower on a baking sheet and top with olive oil and spices then roast in the oven for 15 minutes at 425.

  2. On a baking sheet, spread your nacho chips. Top with roasted cauliflower, black beans, red bell pepper, jalapeno, black olives, and raw jack cheese.  

  3. Bake nachos in the oven at 350 for 15-20 minutes.

  4. Take out of the oven and top with more raw jack cheese, tomatoes, spinach, and organic sour cream.
