Turkey Veggie Frittata

A frittata is typically thought of as a breakfast or brunch meal, but I encourage you to think about making this even for dinner. It’s an easy recipe because it’s made in one skillet and all your friends and family will love the flavors.

Ingredients

  • 1/2 pound organic turkey
  • 1/2 tsp garlic salt
  • 1 cup asparagus chopped
  • 3 asparagus tops for garnish
  • 2 cups baby spinach
  • 1/4 cup kalamata olives sliced
  • 1/4 cup feta cheese
  • 4 tbsp salsa
  • 6 Vital Farms Pasture Raised Eggs

Instructions

  1. Heat 1 tsp olive oil in a cast iron skillet.
  2. Brown turkey in skillet until cooked through, add salt and pepper to taste and garlic salt. Remove once cooked.
  3. Add a little more olive oil to the skillet and add asparagus, stir while cooking 2-4 minutes.
  4. Add spinach to the skillet and cook it until slightly wilted.
  5. Add turkey back into the spinach and asparagus, pressing it down into the bottom of the skillet like a crust.
  6. In a bowl, crack 6 eggs and add salt and pepper to taste.
  7. Add olives, salsa, and feta cheese into eggs and scramble together.
  8. Pour egg mixture over the turkey mixture in the skillet.
  9. Place the asparagus tops as a garnish on the frittata.
  10. Bake at 350 degrees for 30 minutes
  11. Cool slightly and slice into 6 pieces
