Sift together flour, salt, baking powder and cinnamon in a large bowl.
In a saucepan melt 6 tsp of butter and the honey together. Once melted pour into dry ingredients.
Mix with a fork then push the dough together with your hands. Do not knead or overmix.
On a well-floured surface turn the dough out. Roll with a well-floured rolling pin. until it is 1/8 inch thick.
If the dough is too dry, melt one more tsp of butter and add to dough. Should be dry but also stick together to form even flat surface.
Once rolled out, cut rectangles with a knife (about 2.5 inches x 4 inches is the size you see in the photo.) Place on parchment-lined baking sheet. Prick them with a fork.
Cook at 375° for 10 minutes. Cool on a rack.
