Mediterranean Fig Frittata

An easy dish to whip up, this frittata can be both elegant or rustic. It's perfect for breakfast, brunch, or even dinner and will wow your guests with it's sweet and salty taste. Pair it with a side salad or crusty bread as a quick, delicious meal. 

Ingredients

  • 5-6 slices Prosciutto sliced into long strips
  • 1 cup mission figs sliced in half
  • 8 eggs
  • 1 tsp fresh thyme
  • 1/2 cup feta cheese
  • 1/2 tsp garlic salt
  • 1 pinch black pepper

Instructions

  1. Preheat oven to 350

  2. Warm up a cast iron skillet on medium and cook prosciutto. Set aside once done.  

  3. In a bowl, crack eggs and add thyme and feta cheese. Mix with a spoontula or wooden spoon. Blend only until yolks are incorporated, do not over mix. 

  4. Add garlic salt and black pepper. Mix again and pour egg mixture over the prosciutto in the cast iron skillet. 

  5. Place the skillet on the stovetop on medium heat to allow the middle of the frittata to cook. It will be ready when you start to see little bubbles on the edges of the frittata. 

  6. Gently place figs on the top of the frittata and place into the preheated oven for 15 minutes. 

  7. Make sure the frittata is cooked all the way through then cut and serve.
