This week we made this amazing cancer-busting sweet potato smoothie on our show Lunch with Leslie.  We have been highlighting the humble sweet potato all week.  It was a huge hit!  Photos have been pouring in of your sweet potato smoothie creations and we LOVE IT!

Comparing the sweet potato to leafy greens, the sweet potato has more bioavailable beta-carotene than the leafy greens.  They pack a punch of vitamins A and C. Both supports a healthy immune system and protects our cellular structure.  Just think about this, one of the most popular beauty anti-aging ingredients is Retinol A which has been proven to reduce the appearance of wrinkles.  How about you eat the A vitamin and protect your body from the inside out #donotgetwrinkles in the first place!  As always when we support our immune system we are making our bodies inhospitable to cancer!  Sweet potatoes are just the super food for the job!

Move over ice cream, summer has a new treat!  Thick and creamy Sweet Potato Smoothie!

Ingredients
  • 1 small sweet potato peeled, steamed and chilled
  • 1 cup almond milk unsweetened
  • 1/2 banana frozen
  • 1 tsp tahini
  • 1 dash nutmeg
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger fresh grated or dry
  • 1 inch turmeric root fresh grated
  • 1 date or fig pitted
  • 1 tbsp ground flax seed
  • 1 serving whey or pea protein
Instructions
  1. Peel sweet potato and chop.  Steam for 7 minutes until slightly soft.  Remove from steamer and chill in the refrigerator for 2-3 hours.

  2. Add all ingredients into a blender.  Blend until smooth.  

  3. Serve immediately or store in the refrigerator.  Re-blend after storage.
