Healthy Homemade Brownies

Healthy Homemade Brownies

COMFORT FOOD!  I am yelling that at you…these healthy homemade brownies are comfort food!   A brownie is not something you can knock off easily.  In a brownie you have specific elements that need to fall into place or you can’t call it a brownie! Texture, taste, smell, and chewy oohy goodness all must be present to be officially recognized as a brownie.  But lets back up because achieving this with healthy ingredients is no easy task.  A traditional recipe uses refined sugar, butter, and baking flour and lots of each of them!  So what to do when you gotta have a brownie and you gotta have it now but you are grain free and don’t eat refined sugar?  In rides the calvary, in the form of coconut flour, black strap molasses,  applesauce and AVOCADOS!  No, you are not going to have green brownies if you use avocados.  What you are going to have is an amazing texture, smell, taste and yes, even chewy oohy shows up to the party in this recipe!  They are easier to make than ones from a box.  They have amazing real food ingredients and although still a splurge they are superior to anything you can even buy in a gluten free bakery!  Oh and if you don’t make them in front of the picky eaters no one will ever know your secret!  I won’t tell!

Healthy Homemade Brownies

½ tsp coconut oil
1 large ripe avocado
½ cup maple syrup
½ cup organic unsweetened applesauce
1 tsp vanilla extract
3 large eggs
½ cup coconut flour
½ cup unsweetened cocoa powder
¼ tsp sea salt
1 tsp baking soda

Preheat oven to 350 degrees. Grease a 9×9 inch baking pan with coconut oil. In a blender or food processor add avocado, applesauce, maple syrup and vanilla. Pour avocado mixture into a large bowl then whisk in eggs, add coconut flour, cocoa powder, sea salt, and baking soda. Mix until well combined. Pour batter into greased baking pan. Bake for 20 – 25 mins. If you like fudgier brownies cook for 20 mins and if you like more cake-like brownies cook for 25 -30 mins. Allow to cool for 20 mins before cutting. Will make 12 medium size brownies and 16 smaller sizes. To store you can leave them in an airtight container for up to 2 days. For longer storage periods it is best to refrigerate or freeze them.
