Hey ditch those store bought breakfast bars and make your own!  They are snap to make and full of things your body loves and cancer hates.  This particular recipe for fruit coconut bliss bars is full of potassium, fiber, magnesium, and iron.  The will fill you up and not fill you out if you catch my drift.  Don’t be afraid to experiment with your own favorite flavors in these delicious bars.  They are gluten free and vegetarian plant based goodness.  I love that I can control the ingredients and I know exactly what my body is getting itself into.  Enjoy and send us those photos of your versions!  Tag us on all social media @go2kitchens!

Instead of buying cereal bars with mystery ingredients make your own!  Get creative and add your favorite dried fruits and nutty flavors!  Full of energy giving foods that your body love and cancer hates!

Servings: 12 Bars
Ingredients
  • 10 ounce jar of organic unsweet apple sauce
  • 1/2 cup dried apricots, diced
  • 3/4 cup dried figs, diced
  • 1/4 cup coconut sugar
  • 2 tbs chia seeds
  • 1/3 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1 cup old fashion oats
  • 2/3 cup almond flour
  • 1 cup dried coconut flakes, chopped or fine flakes
  • 1/4 cup flax seeds, freshly ground
  • 2 eggs, slightly beaten
Instructions
  1. Preheat oven to 400°. Line 8 inch baking pan with parchment.

  2. In a large mixing bowl add apple sauce, apricots, figs, coconut sugar, chia seeds, and pumpkin seeds.  Stir carefully with a wooden spoon until well combined. 

  3. Add oats, almond flour, coconut flake, and eggs.  Again gently stir together.  

  4. Turn mixture into the baking pan and spread evenly to the edges.

  5. Bake 25 minutes or until golden brown.

  6. Cool in baking pan.  Then lift out of the pan and cut into bars.  Store in airtight container in the refrigerator.  They are awesome chilled!
