This must be the easiest dessert ever!  On a scale from 1 – 10 on the fancy pants meter you can rank this a high 8 with little to no work in the kitchen.  So gear up to impress with this easy Vegan Panna Cotta Recipe.

Traditional Panna Cotta, an Italian Delight! 

The traditional way to make Panna Cotta is with heavy dairy cream, gelatin, sugar and vanilla.  On a recent trip to Italy I splurged and ate the real deal.  As I was savoring every little bite it occurred to me that I could make this with non-dairy vegan ingredients.  As soon as we arrived back at the hotel I scribbled out a rough draft of the recipe I wanted to make once I returned home. The biggest switch was to find a non-flavored plant based gelatin.  After some research and some fails I decided on agar agar powder.  It is actually a dried product made from sea vegetables and is quite good for you.  Anytime I can infuse a little healthy in a dessert recipe I get excited.  Traditionally Panna Cotta is served with caramel or chocolate sauce and/or fresh berries.  I like the fresh berries and a dash of cinnamon.  I know you will enjoy this super easy recipe!  Send photos of your Vegan Panna Cotta creations to me at talk2thehands@go2kitchens.com!  We would love to feature them on our page!

Vegan Panna Cotta  

1 can full fat coconut milk or coconut cream

2-3 tbs coconut syrup

1 tsp agar agar powder

1 vanilla bean, split 

Place all ingredients in a saucepan and bring to a boil. Turn heat down to simmer and cook 2 -3 minutes whisking constantly. Pour mixture in Silicone forms and chill for 2-4 hours. Turn out onto plate and serve with fresh berries, dash of cinnamon or dark chocolate sauce.
