Cajun Red Beans and Dirty Broccoli Rice 

Woo-wee! Laissez les bon temps rouler! That’s Cajun for let the good times roll, and we are about to do just that with this Cajun Red Beans and Dirty Broccoli Rice! This recipe brings some heat with my Cajun spice mix, but remember you can always adjust the seasonings to your own taste preference. Are you spice or mild? 😉 Also, you know me, I can’t stop myself from adding in some veggies! I used CeCe’s Veggie Noodle Co. riced broccoli to replace the white rice, adding in fiber, vitamin C, vitamin E, manganese, potassium, copper, and more! #cancerhates it when we hack our comfort food! 

The beans in this recipe need about 2 hours to cook, so this is a good meal to make on a weekend or when you have some extra time. Cook your beans earlier in the day then whip up the dirty “rice” when you are ready to eat! You will also want to soak your beans overnight so plan accordingly.

Cajun Red Beans and Broccoli Rice

This recipe has some extra prep steps to it, but I promise you it will be worth it in the end! Play some Zydeco music while cooking and you’ll swear you’re being whisked away to Louisiana! Bon Appetite!

Ingredients
Cajun Spice Mix:
  • 2 tsp sea salt
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1/2 tsp dried oregano
  • 1-1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes
Mix all spices in a jar and shake well. You can store them in a lidded jar for 3-4 months.
Ingredients for the beans:
  • 1 tbsp olive oil
  • 1/4 white onion diced
  • 1 tbsp minced garlic
  • 1 stalk celery diced small
  • 1 green pepper seeded and minced
  • 1/2 lb kidney beans
  • 2 tbsp fresh parsley
  • 2 bay leaves
  • 1/2 tsp thyme
  • 1 tbsp Cajun spice
  • 1/2 tsp sage
Ingredients for broccoli rice:
  • 1/4 white onion finely diced
  • 1 celery stalk diced
  • 1 Roma tomato
  • 1 tbsp fresh garlic minced
  • 1 tbsp Cajun spice
  • 16 oz broccoli rice
  • 1-1/2 cups vegetable broth
  • Sea salt
Instructions
Instructions for the beans:
  1. Soak your kidney beans in a large bowl overnight. Make sure you double the water in the bowl because the beans will expand as they soak.

  2. In a large pot add olive oil, onion, garlic, pepper, and celery. Stir the vegetables, cover, and lower the heat and let them sweat for 3-5 minutes.

  3. Strain your beans and rinse them well.
  4. Add 2 cups of water to your vegetables and add parsley, bay leaves, thyme, Cajun spice, sage, salt and pepper to taste. Bring to a boil and stir.
  5. Bring the temperature to the lowest setting, cover, and simmer for 2 hours.
Instructions for broccoli rice:
  1. Add garlic to a pan with olive oil on medium heat.
  2. Add in onion and celery. Stir and cook for 2-3 minutes.
  3. Add tomato, Cajun spice, and broccoli rice. Continue stirring and add salt to taste.
  4. Add vegetable stock, making sure broccoli rice is covered. Cover the pan and let simmer on medium for 10 minutes.
  5. Uncover and stir over medium heat until the liquid is absorbed.
  6. Serve in a bowl with beans and top with parsley.
