Normally the Waldorf Salad is a decadent treat that I reserve for brunch with girlfriends.  That is until I remade this Waldorf Salad Recipe.  In the late 1800’s a “maître d’hotel” at the famous Waldorf Hotel in New York City (now known as the Waldorf Astoria) created this and it was a hit.  The hotel still uses it as a mainstay of the famous Peacock Alley Restaurant Sunday brunch. You can also thank them for Red Velvet Cake! A traditional Waldorf Salad has sweet apples, celery and mayonnaise.  The go2kitchens recipe here has more surprises than that!  Our recipe has goodness from top to bottom.  Even the dressing is all raw food.  The taste? AMAZING, rich and decadent just like the original.  Satisfies the tastebuds and belly with all its goodness.  You can’t miss with this one!

Waldorf Salad Recipe

Waldorf Salad Recipe

DRESSING:
10 macadamia nuts
1 clove garlic, rough chopped
1 tsp Nutiva Hemp Oil or almond oil
½ tsp lemon zest, finely grated
5 stalks of celery, rough chopped and divided
½ cucumber, roughly diced
black pepper to taste

SALAD:
1 sweet dessert apple, cored and roughly diced
2 tsp parsley, minced
¼ cup dried cranberries
juice ½ lemon
½ cup walnuts
2 romaine lettuce leafs

In a  bottom blade blender add macadamia nuts, garlic, almond oil, lemon zest, 1 stalk of chopped celery, ¼ of cucumber, and black pepper to taste. Blend on low until smooth. It should be thick, if it is too thin add more nuts. If it is to thick add more oil or cucumber. In a large bowl combine apple, remainder of celery, remainder of cucumber, parsley, dried cranberry, and lemon juice. Stir lightly until mixed. Pour the dressing into the bowl and mix until all contents are coated. Add 1 romaine lettuce leaf to plate and spoon mixture into the center. Top with chopped walnuts. Serves 2

Please Note: The bottom blade blender is important so you will get a rich creamy dressing.  I had a blender quit in the middle of making this salad and then I used a coffee grinder and honestly, it made it perfectly!  So if you have a clean coffee grinder…go for it!
